The Concept
The gracious splendour of The Oak Room sets the scene for Adare Manor’s fine-dining experience. Providing a genuine taste of the best that contemporary Irish cuisine has to offer, The Oak Room restaurant invites guests to explore the culinary treasures of Ireland. The presentation of each dish adds another layer of regional character to every meal. The culinary team has collaborated closely with local artists working in wood and ceramic to create bespoke serving pieces, including some sourced from Adare Manor’s own woodlands and some inspired by the River Maigue which flows through the estate.
The Cuisine
Award-winning Head Chef Michael Tweedie has devised spectacular tasting menus for The Oak Room, drawn from the rich gifts of the Irish landscape. Every care has been taken to source the highest-quality ingredients from Irish artisan producers, including many local suppliers. Exquisite seafood, sustainably farmed meats and game, the bright flavours of freshly-picked vegetables and some special touches foraged from the grounds of Adare Manor itself will take guests on a journey through the distinctive terroirs of Ireland. The Design
The Oak Room was the original family dining room, host to countless intimate family meals and glittering dinner parties throughout its long history. The distinguished oak-panelled room has been lovingly restored and extended to encompass a glorious stone colonnade. The colonnade, once an open terrace leading to the gardens, is now fully enclosed in glass, allowing beautiful views of the formal parterre. When the sun has set, it is a magical setting for dinner by the soft glow of candlelight. High in the arches of the colonnade are a series of heraldic roof bosses, carved from stone to commemorate the marriages of four generations.
The main dining room overlooks the beautiful Maigue river which meanders through the timeless water meadows of Adare. The warm glow of the oak panelling is complimented by wall coverings of deep Irish green pure wool fabric, with walnut furniture upholstered in gold woven fabric. Silk damask curtains and bespoke wool and silk damask rugs add a layer of luxurious softness to the surroundings. The centrepiece of the room is the magnificent carved wooden over-mantel which graces the large fireplace. It was designed by Augustus Pugin, the celebrated architect genius whose mastery of Gothic style can be felt throughout the manor house. Like many of the notable carvings throughout Adare Manor, it is inspired by the natural world and by the heraldry of Dunraven ancestors. The blank shields and scroll intertwined with rose branches were likely intended to be filled with coats of arms and a family tree, though it was never fully completed. The existing carvings, however, are more than enough to enchant the eye: birds with outstretched wings, finely realised leaves and flowers, and an imposing barred helmet carrying an Earl’s coronet. The Quin family motto, carved into a banner, reads “Quae sursum volo videre” or “I wish to see what is beyond.”
The Drawing Room –
The Concept
Overlooking the formal gardens, flooded with natural daylight, radiating warmth and exquisite style, The Drawing Room is the ideal spot for a tranquil interlude. From 8am guests can take their morning coffee by the vast windows, drop in for light meals and refreshments until 5pm, and sip a flute of champagne beneath the ornate gilded ceiling at any time of day. The dress code is semi-casual in the daytime, transitioning to smart casual in the evening, when The Drawing Room provides a graceful setting for cocktails and sparkling conversations.
The Cuisine
The vibrant flavours of fresh Irish produce shine through The Drawing Room’s menu. Exciting ingredients from artisan suppliers such as Duncannon smoked salmon and Toons Bridge baby mozzarella elevate the selection of delicate salads and elegant sandwiches. The Cocktails

The Design
Lady Caroline described The Drawing Room as “noble” and that aristocratic adjective still applies today. The magnificent restoration of the ceiling, with its gold leaf and original plaster details of clustered shamrocks, casts a glow of opulence over the space. The room’s furnishings are an echo of this luminous presence: woven pale vanilla fabric on the walls, armchairs in soft warm shades of gold, and bespoke draperies adapted from an archived 18th century French brocatelle, re-woven for Adare Manor on traditional looms.
The Drawing Room is graced by the work of two historically important architects. The stamp of Philip Charles Hardwick in evident in the grand bay windows, which bathe the room in natural light. Framed by those same windows are gorgeous views of the formal Parterre Gardens, painstakingly designed by Hardwick and the 3rd Earl of Dunraven over the course of several years. Hardwick also contributed one of the imposing fireplaces in the room, adorned with carved crocodiles, a pegasus, and a wolf’s head, among other emblems of the Quin family. The other grand fireplace, carved in Melograno marble, is the work of architectural genius Augustus Pugin, and exhibits his romantic interpretations of heraldic design. The piece features many masterful carvings, particularly of gently twisting oak leaves and acorns: a reference to Adare whose Irish name Áth Dara means “the ford of the oak tree.”
The Tack Room –
The Concept
A sophisticated retreat for lovers of fine spirits and companionable conversation, The Tack Room is a haven of welcome and warmth. Delicious food, great company and a legendary collection of the world’s finest libations come together to create an extraordinary atmosphere. A drink by the fireside or at the timeless green marble bar is the perfect end to an evening at Adare Manor, although when the drinks and conversations are flowing, a visit to The Tack Room can easily stretch into the wee small hours.
The Whiskey Collection
The Adare Manor whiskey collection includes more than 100 rare quality bottles sourced from the best producers internationally. The very finest Scotch, Bourbon, Canadian and Japanese bottles are represented here, but the focus, of course, is on the legendary Irish whiskeys. There are some very recognisable names as part of the collection, and many more exclusive releases for the connoisseur to discover. Some of the most complex, sought-after, and outstanding examples of whiskey distillery are featured here, and the collection is always growing.

The Tack Room serves an exceptional menu of tempting light bites, served from 5pm until 9pm. Every item has been carefully crafted for savouring and sharing. Artisan cheeses and charcuterie and elevated versions of favourites such as beef sliders and chicken skewers offer an elegant accompaniment to the most sophisticated drinks.
The Design
The unique and impressive architecture of this space belies its original, more humble purpose. In the days of the Dunravens it was the servant’s hall, a common room where the house staff would gather to eat meals and socialise after hours. For all its grandeur, The Tack Room has always been a place of comfort and conviviality. That history of relaxation and ease still remains in the room, now enhanced by the lush opulence of its rich leather, marble, and bronze furnishings and the gentle glow of low lighting from traditional fringed lamps. The original limestone floor is laid with three bespoke rugs, woven by a local Irish rug company and featuring an abstract design inspired by the stained-glass windows within the Manor House. A blazing fire in the grand limestone fireplace is an invitation to draw up a chair, sit back, and luxuriate in the warmth and hum of lively conversation with a glass of something marvellous by your side. The most arresting element of the room’s original architecture are the massive stone piers which support the vaulted arches of the ceiling, in a design drawn from the 12th century. These columns also form the base and support of The Great Hall overhead: a testament to their timeless strength and fortitude.

Our Executive Pastry Chef Xavier Torne has created a jewel-box menu of sweet treats paired with an extensive selection of first-flush and specially blended teas from around the world, including our very own signature blend, 1832. Dainty cut sandwiches, perfectly crafted miniature pastries and warm scones served with clotted cream and daily-made lemon curd; this afternoon tea is an indulgence to dream about long after your visit.

The Gallery at Adare Manor is a masterpiece within a masterpiece: the Dunraven family’s favourite room, and the centre of their family life in the manor house. In 1832, the 2nd Earl of Dunraven and his wife, Lady Caroline, decided to embark on a complete redesign of their family home, building a grand new manor house in a legendary gothic style. Of all the superb apartments in Adare Manor, The Gallery was the most intimate expression of their creativity and love for beauty, a family sitting room adorned with every beautiful architectural flourish and ornament they could imagine: a process of furnishing and decoration which spanned years. The 2nd Earl once wrote: “The Gallery looks almost like a Cathedral…I do not know how we shall ever fill it.”
The monumental scale of the room was not an accident: its design was inspired by the great cathedrals and long castle galleries of Europe, and by the legendary Hall of Mirrors in Versailles. Its star furnishings were drawn from the treasure troves of the continent in a series of European tours. The deeply expressive woodcarvings, including choir stalls (known as misericords) and the 15th century door found at the western end of The Gallery, came from the Church of Saint Paul in Antwerp, Belgium. The breathtaking stained-glass windows, which trace the noble lineage of the Wyndham and Quin families, were commissioned by the Earl from the finest glass artists in London, and dedicated “in the love and honour of Caroline Wyndham, his countess.” Other pieces were sourced closer to home. A copy of one of those gorgeous carved choir stalls was completed so expertly by local woodcarvers that no one could tell the difference, and further massive oak carvings were commissioned to fill the room with scenes from scripture. Lavish tapestries to cover the walls were embroidered by local schoolgirls. Imposing marble fireplaces were created from “neighbourhood marble.” These masterworks by local craftspeople were more than adornments for a mansion: they became a source of employment and financial support for Adare village during one of the most devastating periods of Irish history, sheltering the community from the worst deprivations of the famine.
For all the grandeur of the space, this was very much a living room: a place of comfort and warmth for all the family. Lady Caroline, describing the felicity of their everyday life here, wrote: “Musical instruments and games of different kinds are scattered throughout the room, a constant supply of rare and beautiful plants is brought in from the conservatory, and their perfume, added to the delicious tones of the organ, and the beauty of all that the eye rests upon, forms a most perfect combination of refined enjoyment.” Today, the reimagined Gallery at Adare Manor continues that legacy of elegance and joy.

The Carriage House Chef de Cuisine Neils Van Oers has created an exciting menu with a particular spotlight on fresh local produce from Ireland’s best artisan suppliers.
